FODMAP Friendly Greek Salad
A delicious Greek style salad makes a perfect accompaniment for any low FODMAP meal.
Ingredients
For the salad
- 300gms/7oz feta cheese
- Lettuce
- 6 tomatoes, cut in wedges
- 2 courgettes
- A small tub of pitted black olives
- Chopped parsley
For the dressing
- 1/3 cup olive oil
- 2 tsp garlic-infused olive oil
- 3 tbsp lemon juice
- 1 tsp wholegrain mustard
- Salt and pepper
Instructions
For the salad
- Cut the feta into small squares
- Slice up the courgettes
- Break the lettuce into pieces
- Place all the ingredients for the salad into a serving bowl
For the dressing
- Place all ingredients into small jar and shake to combine well
- Pour over the salad just before serving and toss
